These Delicious, Delicate Crepes are Quick and Easy and Guess What?...They're Carb-Free!
I miss breakfast treats like pancakes and waffles, but they are oftentimes heavy and loaded down with carbs. I created this crepe recipe and knew it was a winner when I took my very first bite. They are light and perfectly textured, with a subtle spice thanks to the addition of cinnamon and nutmeg. I make these ALL THE TIME. Seriously they have become one of my go-to breakfast treats when I want something special. They have virtually no carbs, packed with protein, and only take a few minutes to whip up. Fold them into triangles and top with some powdered Swerve or load them up with your favorite berries and sugar-free chocolate. You can even omit the cinnamon, nutmeg, and vanilla to make them savory! Any way you make em, you'll absolutely love em!
Keto Crepes

Ingredients:
Makes 4 to 5 small crepes
2 large eggs
1 Tbsp unsweetened almond milk
1/2 tsp vanilla extract or vanilla bean paste (I like Nielsen-Massey pure vanilla bean paste)
1 Tbsp coconut flour (I use Anthony's Organic Coconut Flour)
1 Tbsp almond flour (I like Blue Diamond finely ground almond flour)
1 Tbsp Purecane or Swerve granulated
1/4 tsp cinnamon
dash of nutmeg
pinch of salt
Coconut oil spray for the pan
Directions:
In a small mixing bowl, beat the eggs, add the almond milk and vanilla extract or paste and whisk to thoroughly combine. Add the coconut flour, almond flour, Purecane or Swerve, cinnamon, nutmeg, and salt. Whisk to combine. It's ok if there are a few lumps.
Heat a small skillet over medium heat. Spray the pan with coconut oil and pour 2 tablespoons of the batter into the pan. Swirl the batter around to completely cover the bottom of the pan. Allow to cook until the batter around the edges looks set, about 30 seconds to a minute, then flip and cook on the other side for an additional 30 seconds. Remove from the pan and repeat for the remaining batter. If you want to make savory crepes, simply omit the vanilla extract, cinnamon, and nutmeg!
Just after adding the batter to the pan and swirling around to coat the bottom.
Just flipped over, continue cooking for another 30 seconds. Now that's a pretty crepe!
