Coconut has always been one of my favorite things to eat. I've said it in some of my other coconut recipes. I just love it, anyway I can get it! These little chocolate coconut candies are simply delicious. The textural contrast between the rich dark chocolate and crunchy textured bits of coconut running throughout is just delightful. They are extremely easy and quick to make, and you can double the recipe if you have a large crowd. They are basically the healthiest little chocolates you ever did eat, chock full of MCT's from the coconut, coconut oil, and coconut manna. Super antioxidant-rich dark chocolate balances out the sweet coconut mixture beautifully. These also last for weeks in your fridge or up to a year in the freezer and make an easy and impressive homemade gift for the holidays! They are only 51 calories and .6 net carbs per candy and are also sugar-free, gluten-free, dairy-free, keto, paleo, vegetarian, and vegan!
Sugar-Free Chocolate Coconut Crunch Cups
Ingredients:
Makes 24 cups

4 Tbsp coconut manna, softened (I only use Nutiva coconut manna, it has the best flavor and texture)
2 Tbsp coconut oil, at room temperature
3/4 C Swerve Confectioners
1 tsp vanilla extract
pinch of salt
1 C unsweetened shredded coconut
1 C sugar-free dark chocolate chips (I like ChocZero dark chocolate chips)
Directions:
In a small mixing bowl, mix softened coconut manna(just pop it in the microwave for about 15 seconds) and coconut oil. Stir with a fork to combine. Add the Swerve confectioners, vanilla extract, and pinch of salt and mix thoroughly. Put this mixture into the refrigerator to chill for 15 minutes.
Place the chocolate chips in a microwave-safe bowl and microwave for 30 seconds. Remove and stir, return to the microwave for an additional 15-30 seconds, or until completely melted. Stir until completely smooth.
Remove the coconut oil mixture from the refrigerator and add it to a medium-sized bowl. Add the melted chocolate and shredded coconut and mix well. Scoop about a tablespoon of the mixture into mini muffin liners or candy liners. Refrigerate to set. Enjoy!
