I miss bread! When you are on a low-carb diet, finding foods that are satisfying, in a bready kind of way, can be challenging. This Keto microwave bread is the result of many experiments and trial and error. Finally, I've done it! Recipes don't get any easier than this. Made in a mug, right in your microwave, this bread is only .5 net carbs and 150 calories. It's also packed with fiber and protein and is deliciously flavorful. The texture is oh so satisfying. Make this for a snack any time of day, use it as an accompaniment to any meal, or make yourself a sandwich. Look no further; you've just found your go-to Low-Carb bread recipe! 60 Second Microwave Keto Bread

Makes one serving

Ingredients:


1 Tbsp oat fiber (I use Naturtonix oat fiber for this recipe)

1 Tbsp almond flour (I use Blue Diamond finely ground almond flour)

1/2 Tbsp ground flax

1/4 tsp baking powder

1/8 tsp salt (you may want to adjust the amount of salt, I like mine salty!)

1/2 Tbsp Vegenaise (you can also use mayonnaise)

1 large egg


***If you don't like or want to use Mayo you can omit the Mayo and use an extra large egg in place of the large egg or 1 large egg plus 1 tsp of olive oil!


Directions:


In a microwave-safe mug, use a fork to whisk together the oat fiber, almond flour, ground flax, baking powder, and salt. Add the Vegenaise or Mayo and egg and whisk until thoroughly combined. Microwave for 60 seconds. Allow to cool for 1 minute before removing from the mug and slicing. Enjoy!
