Peanut Butter Coconut Crunch Crack Bites

Crunchy Crystalized Coconut Running Through Savory Rich Peanut Butter...Ummm, Yes Please! Only 1.5 Net Carbs and 63 Calories Per Bite!


You have no idea, well you will if you make them, just how addictive these little crunchy peanut buttery bites are...hence the name! The texture I've achieved in these sweet treats is like nothing you've ever tasted. The crystallized coconut candy has a light, snappy texture. It reminds me of the inside of one of those buttery finger-shaped candy bars. That crunchy sweetness rolled into thick savory-sweet peanut butter...oh lord, help me! Betcha can't eat just one!


Peanut Butter Coconut Crunch Crack Bites


Ingredients:


Makes 20 bites

2 C unsweetened almond milk

2/3 C Purecane (it's important to use this to get the right texture)

3/4 tsp tapioca starch, also called tapioca flour (I use Bob's Red Mill tapioca flour)

pinch of salt

1 C unsweetened shredded coconut

1 Tbsp coconut manna (I only use Nutiva coconut manna, it has the best flavor and texture)

1/4 tsp salt


Directions:


In a small saucepot, over medium/high heat, heat the almond milk until hot but not boiling. Stir in the Purecane and bring it to a boil. Turn the burner down to low and simmer for 30 minutes, or until reduced by half, stirring occasionally. Remove 2 tablespoons of the liquid and place in a small bowl or cup. Add the tapioca flour and stir until completely dissolved and smooth. Return this mixture to the pot and stir. Allow to simmer for another 2 minutes. Remove from the heat and stir in the vanilla bean paste and salt. Place the mixture into a Tupperware container or bowl covered with plastic wrap and put into the refrigerator to chill for one hour.


Remove the chilled liquid from the refrigerator. It should look hard and crystalized on top and liquid on the bottom. Transfer to a microwave-safe bowl and add the coconut. Microwave this mixture for 30 seconds or until just warm. The coconut manna will harden if it hits a cold mixture. Add the coconut manna and stir to thoroughly incorporate. Cover the bowl with plastic wrap and refrigerate for another 30 minutes.


Once the coconut mixture has chilled for 30 minutes, remove it from the refrigerator and add the peanut butter powder. Mix until evenly combined. Next, add the Nutpods and salt. Mix together. Using a one tablespoon scoop or measuring spoon, portion out 20 even-sized pieces. Roll each one between your palms to create perfect round balls. Store in the refrigerator in an airtight container. Transfer to the freezer after one week.
